Under the general supervision of the Administrator and with guidance from the Director of Dietary Services, the Dietary Services Manager position assumes responsibility for residents receiving the highest quality nutrition and food service available within economic constraints, consistent with requirements identified on individual care plans and with applicable laws, regulations, and professional guidelines. The Manager plans, develops, directs and controls the activities of the Dietary Department. Functions with some latitude within technical expertise, and within constraints of established policy and procedure, consistent with accepted nutritional, dietary, and food service standards of practice.


  • Documented completion of State-approved Food Services Supervisor Course.

  • High school diploma or equivalent.

  • Certified Food Protection Manager

  • ServSafe Certification preferred

Must be willing to complete the following during new hire orientation:

  • Food, Safety, and Sanitation Study Courses

  • Modified Diet Training

  • Knowledge of institutional food service industry.

  • Demonstrated institutional food service management skills.

  • Functional Literacy in written and spoken English.

  • Management and supervisory skills.

  • Proficient interpersonal relationships and communication skills.

  • Ability to follow written and oral instructions.

  • Complete assignments timely, completely and accurately.

Essential Functions

  • Plan diets and menus approved by the qualified dietitian.

  • Assure nutritional assessments/reassessments and care plans are initiated, completed, implemented and maintained consistent with established procedures and timelines.

  • Participate in interdisciplinary care plan conferences; integrate nutritional plans of care with others; coordinate closely with Nursing Department via regular communication with DON.

  • Implement and document in the dietary component of residents' assessments and care plans.

  • Document each resident's progress toward care plan goals.

  • Review and revise each resident's care plan as necessary.

  • In conjunction with the qualified dietitian, gather data to assess residents' nutritional status and nutritional needs and document in medical record. Monitor and record changes to nutritional status/needs of residents; adjust recipes/menus to meet needs.

  • On a weekly basis, review weight and skin concerns and report to qualified dietitian and DON; make recommendations/revisions in nutritional plan with consultation from the dietitian.

  • Maintain procedure/instruction manual specific to department; assure correct procedures are implemented in preparation and serving of food and result in correct quantity, quality, temperature, and appearance of food served.

  • Develop standards for and assure purchase of high quality food items, and proper storage and handling/preparation according to health and sanitation guidelines.

  • Assume responsibility for Dietary Department compliance with current regulations; act as primary liaison with federal and state survey agencies regarding dietary services.

  • Supervise food preparation and service.

  • Perform simple arithmetic and units of measurement conversions used in food preparation.

  • Interview residents and determine specific dietary needs and preferences.

  • Inform and educate residents regarding therapeutic diets.

  • Work with Administration and the Activity Department to plan menus and provide special foods for parties and/or other scheduled programs.

  • Participate in regular conferences with Consultant Dietitian, Administrator and other department heads.

  • Post current menus.

  • Record menu changes and have approved by Consultant Dietitian.

  • On a daily basis, the Dietary Manager or designee will review food consumption

  • Maintain menus for required retention period.

  • Plan food substitutions for residents who refuse or are unable to eat food served.

  • Receive, investigate, and resolve concerns about food services from residents/families in accordance with positive customer relations principles.

  • Assure adequate policies and procedures are in place to manage emergency situations or "systems breakdowns" with minimal negative impact on food service to residents.

  • Establish and maintain a perpetual food/supplies inventory, immediately correcting discrepancies or shortages.

  • Perform any food service task necessary to provision of meals according to schedule and standards of practice; "cover" for absent staff if unable to find a replacement.

  • Direct allocation of, and establish guidelines for, efficient economical utilization of dietary department equipment, supplies, and space.

  • Purchase or requisition food and supplies.

  • Supervise the receiving and storage of food.

  • Keep records of repairs of equipment in the dietary department.

Delegation of Authority

Authority is delegated to the individual in this position to:

  • Implement dietary and food service policies and procedures to meet residents' needs and in compliance with federal, state and local requirements.

  • Determine the personnel requirements for the dietary department to make recommendations for sufficient staff to implement dietary and food service policies and procedures.

  • Implement a monitoring system for the dietary and food service department and make recommendations for implementation to assure compliance with federal, state and local requirements.

  • Supervise preparation of menus to meet residents' dietary needs.

  • Assess residents' dietary needs and develop appropriate dietary plans in compliance with physicians' orders.

  • Supervise the entire operation of the dietary department.
