The Dahlia Pastry Kitchen prides itself on making fresh scratch desserts with seasonal inspiration. The team produces hundreds of pastry items on a daily basis, which are sold throughout the Seatown Restaurants group.

This is a full-time positions. Ideal candidates will be available to work mornings (6:00 AM start) and weekends.

About the Position

The Production Baker is responsible for skillfully crafting over 200 varieties of fresh scratch bread and/or pastry dessert items with seasonal inspiration, in support of our company-wide mission of offering deliciousness served with graciousness in all that we do. This position is also responsible for maintaining a focused and methodical composure to ensure the final product meets our high quality standards, working with collaborative and team-driven intentions, and performing all other responsibilities as directed by the business or assigned management of which the employee is capable of performing. This is a non-exempt position and typically reports to the Chef.

Essential Functions

  • Sets up station according to pastry production guidelines.

  • Prepares all food items as directed by adhering to recipes, portion controls, and presentation specifications as set by the Chef.

  • Measures and mixes ingredients.

  • Demonstrates excellent food safety, sanitation, and organizational skills, while completing duties in a timely manner.

  • Operates and maintains a variety of kitchen equipment.

  • Maintains a clean and organized station; assists with the cleaning, sanitation, and organization of kitchen, walk-in coolers, and all storage areas.

  • Assists and supports in other tasks within the scope of the team, as needed.

  • Holds appropriate licenses as required directed by local, State, and/or Federal law.

  • Performs additional responsibilities, although not detailed, as requested by a manager that the employee is capable of performing.

Requirements

Knowledge

  • At least 1 year of experience baking professionally, OR has been to culinary school/has a firm understanding of the fundamentals of baking

  • Ability to implement baking techniques.

  • Developed food knowledge with a strong desire to continue learning.

  • Ability to obtain appropriate licenses as required directed by local, State, and/or Federal law.

  • Working knowledge of applicable safety and sanitation procedures.

Skills and Aptitudes

  • Must commit to providing gracious service with exceptional food knowledge.

  • Requires developed knife handling skills and food preparation skills, including ability to follow recipes and prep lists (including demonstrating basic math skills).

  • Ability to interact with others in a friendly, enthusiastic, and outgoing manner in a team environment.

  • Ability to demonstrate problem-solving, self-motivation, and organization skills.

  • Ability to work calmly and effectively under pressure.

  • Ability to take direction and multitask.

  • Requires the ability to learn and maintain related baking knowledge.

  • Requires the ability to speak, read, and comprehend instructions, short correspondence, and policy documents, as well as converse comfortably and professionally with guests, co-workers, and managers.

Working Conditions

  • Requires the ability to bend, twist, and stand for extended periods of time to perform normal job functions.

  • Frequently works with sharp knives, utensils, and ovens.

  • Frequently works in hot environment, with occasional environmental exposures to cold.

  • Requires the ability to lift and transport up to 50 pounds on occasion and up to 35 pounds regularly.

  • Must meet State minimum age for using required equipment.

  • Flexibility and/or reliability in work schedule are required to provide support when it is needed.
