Our Food and Beverage Department is seeking to fill a culinary intern for summer 2020. The intern will coordinate and participate in activities of cooks and other kitchen personnel engaged in preparing foods for the Grand Traverse Resort and Casinos while using proper food-handling techniques.
MINIMUM JOB QUALIFICATIONS
Education & Experience Required
High School Diploma, GED or equivalent experience
Be currently enrolled at a University, College, or Community College and have the option to receive college credit for the internship.
Serv SAFE upon hire
1 year working in a food preparation position.
Relevant experience or experience with customer service
Work productively under strict time restraints with variable deadlines
Must be able to lift and/or move objects up to 75 lbs.
Requires reaching, bending, stretching, kneeling, crawling, lifting and carrying
Must be able to work flexible hours including nights, weekends, holidays and/or days off and variable shifts
Additional Job Requirements
Must be 18 years old.
Must be able to pass a background investigation and a drug and alcohol screen as a condition of employment.
Must successfully pass a job interview.
ESSENTIAL JOB FUNCTIONS
Ensure interactions with internal and external guests follow the guidelines of the ACT Customer Service Program.
Must be a leader and have a great knowledge of both hot and cold food preparation and production
Work well under pressure and meet deadlines effectively
Must be able to handle a high volume of a la carte line production
Must be able to produce bulk or batch cooked food for a buffet-style restaurant
Cooks or otherwise prepares food according to recipe
Cuts, trims, and bones meats and poultry for cooking
Portions cooked foods and select appropriate garnishing
Maintain a high standard of sanitation and safety
Keep waste and spoilage to a minimum by proper rotation, storage, and usage of all food items
Complete all assignments requested
Responsible for cleaning and sanitation of own area using Health Department guidelines
Must follow proper grooming and dress standards set forth by the Employee Handbook
Maintain an open line of communication with supervisor
Follow opening and closing procedures
Must understand and abide by environmental practices of the GTR&C
Willingness to cross-train and provide support in related areas of operations.
Special projects as assigned by Management
EQUIPMENT TO BE USED
Items include, but are not limited to the dishwasher, deep fryer, broiler, steam kettles, Alto Sham, mixer, slicer, steamer, char grill, flat top grill, freezer, cooler, hot box, knives, juicer, saut station, food processor.
Must be able to work in a fast-paced, stressful atmosphere, having the ability to deal with difficult situations and people without losing perspective while remaining focused positive and professional. Must be able and willing to work in a crowded, loud, smoking environment. Must be able to handle being under constant surveillance. The needs for quickness and ease of adjustment to the work environment and flexibility to change are essential in this position. Must practice all safety policies, procedures, and standards as set by OSHA and Tribal Code 14 GTBC 5.
