Provides leadership and oversight to the Culinary function. Oversees and drives development, design, layout, execution, and rollout of new culinary programs and concepts, food and beverage bar venues, and recipes. Drives culinary influence across all purchasing teams, including meat, seafood, produce, prepared foods, specialty, and bakery. Provides exemplary leadership and mentoring for in-store chefs, local 3rd-party supplier partnerships, and outsourced commissaries. Assists store development teams with kitchen and food venue design and layout for new stores and remodels. Develops and maintain relationships with Friends of Whole Foods Market, attracting local culinary talent and restaurant concepts to operate as stand-alone venues within WFM locations.

Responsibilities:

  • Provides culinary vision while partnering with the regional leadership to create new culinary programs, venues, decor, messaging and branding - including packaging and labels.

  • Develops new culinary programs for all departments and is responsible for program development around food quality, culinary innovation, and presentation.

  • Develops and maintains regional and Friends of Whole Foods Market food venue concepts - driving food quality, seasonality, innovative selections, Team Member training, and financial success.

  • Drives culinary excellence, cultivates culinary talent, and fosters an environment of enthusiasm for food and WFM quality standards.

  • Partners with local, regional, and construction leaders and teams on venue and kitchen design, including fixtures, equipment, venue flow, and the customer journey.

  • Creates and maintains a strong partnership with the Global Culinary team on initiatives.

  • Ensures Chef-Tec recipe costing data upkeep and accuracy across all teams.

  • Develops program overviews, manuals, merchandising standards, trainings, and program implementation materials.

  • Works with all teams to train Team Members in proper use and presentation of product.

  • Researches and develops products and concepts to drive sales and evaluate culinary needs to maximize sales. (i.e. seasonal updates for salad bar, sandwiches, chef's case, oven ready programs).

  • Plays a leadership role in recruitment strategy for culinary positions and the development of culinary bench strength.

  • Develops regional culinary food tours and comp shops.

  • Provides timely feedback on product and Team Member concerns to regional leadership.

  • Shares expertise and acts as a consultant to the stores, kitchen, and vendors for new and/or improved products & venues.

  • Ensures planning incorporates data and information from customer, supplier, partner, and company perspectives.

  • Collaborates with task / project stakeholders to identify, evaluate, and resolve emerging and anticipated issues.

  • Demonstrates clear understanding of WFM's core business, supply chain and customer / market / supplier interfaces.

  • Assesses how products, processes, and operating models impact the company's business.

  • Understands how changes in customer expectations, the competition, new business, new markets, and evolving strategies impact the company's competitive position and long-term prospects.

Education & Experience:

  • BA/BS degree and 6-8 years' relevant experience OR equivalent combination of education and relevant experience.

  • 2-4 years leadership experience.

  • Food safety certification preferred.

Supports all phases of production development from initial concept through menu planning, recipe testing, venue design, Team Member training, packaging and costing, promotions, follow up review, and modification. Follows established company processes for researching and developing new recipes, venues, and delivery methods. Supports new store openings and renovations by partnering with perishable teams and ensuring outstanding production execution including food safety, sanitation, purchasing, and receiving. Promotes a culture of hospitality by enhancing customer and Team Member experiences through food. Responsibilities: * Works closely with leaders and key stakeholders to plan new venue and program concepts. * Works with Team Members and in-store production specialist to support all aspects of the R&D process. * Offers suggestions and ideas to enhance menu planning, schematics, and production for all new store service and self-service venues and programs. * Performs hands-on recipe development. * Provides ongoing communication and education on all aspect of food safety; ensures communication is up-to-date and dynamic to keep up with changing / improved standards. * Monitors recipe development, food preparation, and adherence to safety standards, develops recommendations and strategies to address issues and challenges. * Ensures effective SOP communication and trains Team Members on how to execute recipes. * Facilitates in-house special events and caterings for assigned region(s) / offices. * Splits time between the regional office, facilities, and stores. * Trains Team Members at all levels on production operations, cooking, and preparing bakery/prepared foods. * Performs re-trainings for programs as needed. * Performs program walk-throughs and store visits with Store Leaders and Team Leaders * Guides and mentors teams through detailed and open communication, hands on support, and updated training material.
