PURPOSE OF YOUR JOB DESCRIPTION:

You will work with other team members o provide our customers with quality meals. A quality meal is a meal prepared and served in a safe and timely manner that meets our customer's needs.

Change is the norm - there is always a way to do something better and you will be challenged that way. You will work with other team members to achieve the department goal of a Gold Standard Department - a Department that exceeds the standards set by jCAHO and the State of MA.

PERFORMANCE REQUIREMENT / DUTIES AND RESPONSIBILITIES:

FOOD PREPARATION:

Prepares food amount according to production sheets.

Prepares food for special functions as requested.

Follows standardized recipes.

Follows cooking schedule - food is ready on time and set up in proper pans.

Is able to operate all equipment and utensils in a safe and efficient manner.

Follows Prep and Pull sheets.

Properly labels, dates, and stores food.

Food is cooked and stored at proper temperatures.

Raw Food is stored under Cooked Food.

Food quality is good - taste, temp, appearance.

TRAY LINE:

Is ready to serve tray line at set times.

Serves correct portions.

Informs Dietitian or MGR re any questions concerning meal tickets.

Serves in timely manner - does not hinder speek of tray line.

SANITATION:

Utilizes proper cleaning methods and solutions.

Maintains department sanitation through check as you go work style.

Follows cleaning list.

Wears hairnet or restraint.

Washes hands at shift start and as required throughout shift.

Wears gloves when handling ready to eat foods.

Follows HACCP requirements.

EDUCATION REQUIREMENTS:

High School education & formal education in food preparation.

Serve Safe Food Service Sanitation Certificate of Completion.

EXPERIENCE:

Three years of prior food service cooking experience.
