About The Tarheel ChalleNGe Academy:
The Tarheel ChalleNGe Academy (TCA) is a quasi-military style resident program for at risk youth in the ages of 16-18. Sponsored by the North Carolina National Guard, the TCA mission is to redirect the efforts of young adults who have had trouble succeeding in the normal high school environment. The intent is to give them the skills and attitude to become productive citizens in their communities. The Academies are located in two different locations: Salemburg and New London, North Carolina. It is a 17-month program divided into two distinct phases: a five-month in-residence phase at the academies, and a twelve-month post-residential phase immediately following graduation for the in-residence phase. TCA seeks to improve the life and future employment potential of its cadets by concentrating on eight core components which are: Life Coping Skills, Academic Excellence, Responsible Citizenship, Job Skills, Service to Community, Health and Hygiene, Physical Fitness, and Leadership/Followership.

To qualify for this position, applicants must demonstrate ALL of the following KSAs:
Experience with methods of preparing meats, vegetables, and foods in quantity lots.
Experience with the uses and adaptabilities of the various pieces of equipment including food processors and ovens.
Experience inspecting incoming fresh vegetable, fruits, and meats to determine that they meet purchase order specifications.
Experience maintaining high standards of personal cleanliness as well as food sanitation.
Experience interpreting and following standardized recipes, while adhering to planned menus as well as specific oral and written instructions.
Experience with cooking times and temperatures of various foods and methods of preserving their flavor, food value and safety.
Experience planning food for a large number of persons and to requisition needed food and supply items.
General knowledge of federal and state laws and policies relating to the Federal School Nutrition Program.

Education and/or experience in food preparation that is directly related to the job and consistent with accepted practices of the trade equivalent to one year of experience in a commercial and/or institutional setting.
