Salary Grade - GN02 Recruitment Range - $31,200 - 33,100
This posting is for two Cook positions located at CA Dillon Youth Center in Butner, N.C.
Due to Raise the Age legislation, start date for these positions will commence on November 1, 2019.
This position will assist the Food Service Supervisor II position and provide support of the facility's School Nutrition Program and will ensure compliance with the Department's Federal School Nutrition Program regulations by:
1.Assist supervisor with maintaining high standards of control for quality food production and service.
2.Providing nutritionally adequate meals meeting the federal School Nutrition Program meal patterns and dietary standards, while adhering to planned menus;
3.Follow operational procedures for efficient and effective food production and service;
4.Assist supervisor with maintaining required records (production records, HACCP binders), reports (SFA-4 School Record of Daily Meal Participation) and inventories in compliance with federal and state regulations;
5.Assist supervisor with food and supplies requisition as needed, check the cost and quality of items received, and insures proper storage;
6.Follow Department procedure for inventorying food, supplies and equipment;
7.Assist supervisor with ensuring compliance with School Nutrition Local Wellness Program as well as being a committee member of the School Nutrition Local Wellness Program;
8.Properly uses and cares for all equipment;
9.Assist supervisor with maintaining integrity and accountability of the facility School Nutrition Program through compliance with all federal and state regulations and Department School Nutrition policies;
10. Complying with policies and procedures of the Department;
11. Follow Federal and State safety and sanitation procedures;
12. Provide positive, professional and friendly customer service with facility staff; use a caring approach when interacting with juveniles;
13. Obtain and maintain an approved Food Safety Certification as well as attend any other meetings and/or training as required by federal and state regulations;
14. Perform all duties and responsibilities in an ethical and professional manner as designated by the Detention Center Food Service Supervisor II and/or immediate supervisor, facility Director, the Director of School Nutrition and Administrative Officer I.
MANAGEMENT PREFERENCES: Management prefers the following:
Applicant with a GED or High School Diploma. Applicant with specific knowledge of the Child Nutrition Program. Applicant with general knowledge of federal and state laws and policies relating to the Federal Child Nutrition Program. Applicant who has completed certification in Food Safety Practices.
Primarily first shift position but must be willing to work where needed and to ensure coverage at areas responsible.

These KSAs, along with the minimum education and experience listed, are required in order to be deemed 'eligible' for the position. You must demonstrate through documented experience or provide supporting information within the body of your application to demonstrate your possession of ALL KSAs listed.
Considerable knowledge of the methods of preparing meats, vegetables and foods in quantity lots.
Considerable knowledge of the uses and adaptability of the various pieces of equipment including food processors and ovens.
Ability to inspect incoming fresh vegetable, fruits and meats to determine that they meet purchase order specifications.
Ability to maintain high standards of personal cleanliness as well as food sanitation.
Ability to interpret and follow standard recipes and prescribed menus as well as specific oral and written instructions.
Thorough knowledge of the cooking times and temperatures of various foods and methods of preserving their flavor, food value and safety.
Ability to plan food for a large number of persons and to requisition needed food items.
Candidate must have/or obtain and maintain a food safety certification.
Minimum Education and Experience Requirements
Education and/or experience in food preparation that is directly related to the job and consistent with accepted practices of the trade equivalent to one year of experience in a commercial and/or institutional setting.
