SUMMARY: The Lead Cook will be experienced in high volume, high quality preparation and production of hot and cold catered event foods. They will be responsible for cooking in public and interacting with clients as required. The Lead Cooks daily assignments will be based on specific business needs.

DUTIES AND RESPONSIBILITIES

  • Organize production for work teams.

  • Prepare menu items from posted production lists.

  • Cook and present menu items to specification.

  • Adhere to food safety procedures and maintain organized work area. Maintain cooling logs.

  • Supervise teams in production and execution of events.

  • Work club concession stands on event days and action stations as needed.

  • Some roles may require strict confidentiality.

  • Schedule flexibility/required to work holidays, nights and weekends based on business.

  • Team first attitude.

  • Special projects and assignments as business dictates

SUPERVISORY RESPONSIBILITIES

  • This position has no direct supervisory responsibilities but will interface with other culinary staff to include cooks in preparation projects or event execution

SKILLS AND QUALIFICATIONS

  • Minimum 3 years of upscale food production in high volume catering operation or restaurant.

  • Minimum of 1 year supervising culinary staff.

  • Excellent interpersonal skills.

  • Good written and verbal communication skills.

  • Culinary degree or certification preferred.

  • Food Safety trained.

  • Demonstrable ability in all cooking methods: Grilling to temperature, sautéing, roasting, braising, deep frying, poaching.

  • Conduct disciplinary sessions when necessary.

  • Able to use E-mail and Internet.

  • Familiarity with using Microsoft Word and Excel.

  • Excellent Attendance.

  • Devoted learner

PHYSICAL DEMANDS

  • While performing the duties of this job, the employee is regularly required to sit and use hands to handle or feel.

  • The employee frequently is required to talk or hear.

  • The employee is occasionally required to reach with hands and arms.

  • The employee must regularly lift and/or move up to 10 pounds and occasionally lift and/or move up to 25 pounds.

  • Specific vision abilities required by this job include close vision, distance vision, color vision, peripheral vision, depth perception, and ability to adjust focus.
