JOB SUMMARY:

This job is responsible for preparing food products (ie. main entrees, soups and sauces) in an institutional setting utilizing basic and advanced cooking techniques, standardized recipes and plating guidelines. Work involves meeting production schedules in accordance with health, safety and sanitary standards, guidelines and regulatory requirements. An incumbent is accountable for the quality of food items prepared, ensuring proper utilization and storage of food and supplies, and for maintaining the orderliness and cleanliness of equipment, supplies and work areas.

Food handling activities are performed in accordance with external and internal guidelines and regulatory guidelines, and an employee works effectively to minimize waste during the flow of food while maintaining a quality end product.

ESSENTIAL FUNCTIONS:

  • Prepares, cooks, carves, and portions out meat, main entrees, vegetables, starches, soups, and sauces.

  • Maintains all hot and cold prepared food at proper temperatures.

  • Plans cooking schedule.

  • Selects and displays recipe cards.

  • Reviews production sheet to determine type and amount of food to be prepared.

  • Procures food items from refrigerator, freezer, or storage areas.

  • Requisitions, or directs the procurement of, supplies as needed.

  • Labels and dates all leftovers and/or refrigerated food.

  • Follows department and government safety and sanitation standards

EDUCATION:

  • High School Diploma or GED Required.

EXPERIENCE:

  • Four years of progressively responsible related work experience in the fast-food, restaurant, hospitality or other culinary environment or venue,

  • Or any combination of education and experience that would demonstrate the capability to meet the requirements of the position.

  • Vocational training courses in large-quantity cooking is strongly preferred.

LICENSE/CERTIFICATION:

  • Current Department of Health Food Handler's permit preferred

  • Valid Pennsylvania State Driver's License is required.

Follows standard practices and procedures in the Food and Nutrition Services Department. Maintains a high level of sanitation and safety in accordance with regulatory agencies. Essential Duties: * Operates cash register and makes financial transactions being accountable for money taken in and given out. Completes cash reports and follows cash handling procedures. * Organizes and plans daily activities using the task analysis as a guide. Reviews menus and service guidelines in order to be knowledgeable about service. Anticipates and works ahead as necessary to accommodate the needs of the upcoming shift. * Communicates with co-workers, Supervisor, Manager and others as necessary regarding the work of the department. Participates in department communications such as Pre-Service Meetings, weekly and monthly meetings and monthly and annual trainings. * Maintains equipment and work area as necessary throughout the day. Completes daily and special cleaning needs as assigned. Adheres to good sanitation and safety practices. Reports any maintenance repairs or unsafe conditions to management. * Completes any other maintenance and/or upkeep duties as assigned on the task analysis. * Checks and records temperatures as necessary in accordance with HACCP. * Sets up, services and disassembles all areas within the Café. * Review menu boards and signage to ensure accuracy. * May assist in serving food items as needed.
