Summary

Under general supervision, prepares large quantities of a variety of food including meats, fish, poultry, gravies, cereals, soups, vegetables and other foods. Uses various methods of cooking and seasoning and adheres to proper preparation methods.

Primary Duties and Responsibilities

  • Cooks food as directed in the operational menu plan for the facility food service operation. Ensures recipes are extended to the facility population requirements. Maintains accurate production records.

  • Directs work, provides training, and performs inspections of tasks performed by students.

  • Prepares meals according to scheduling and sanitation standards. Ensures the quality assurance of all foods and supplies.

  • Ensures adherence to special diets and allergen lists.

  • Responsible for placing orders for food and supplies as assigned by management. Checks in deliveries and takes inventory of food and supplies as required.

  • Ensures the sanitation and safety program is actively practiced in all areas of the department.

  • Assists management in maintaining a high-level of good client relations.

  • Supports the Abraxas philosophy and mission and promotes the Seven Key Principles of care.

  • Demonstrates appropriate use of crisis intervention techniques and skills.

Job Requirements

Minimum Requirements

  • The following education requirements are acceptable for this classification including:

  • High school diploma or GED and one year prior experience in food preparation obtained in commercial, military, or institutional setting preferred.

  • Other Qualifications:

  • At least twenty-one (21) years of age.

  • Criminal Background checks (Federal, State, Sex Offender, and Child Abuse registry).

  • Pre-employment physical exam and drug screen.

  • Valid driver's license from employee's State of residence.

VIEW JOBS 9/13/2018 12:00:00 AM 2018-12-12T00:00 Overview Our Cook works as a team member in the facility kitchen and prepares adequate and nutritional meals for the patients and staff. Responsible for rotating food stores, ensuring food is safe for consumption, and cleaning and sanitizing work areas throughout shift. This position reports pertinent information to the Food Service Director/Manager for follow-up. Qualifications Education: * High school diploma or equivalent required Experience: * One (1) year cooking experience required. * Experience in commercial, military or other institutional setting preferred. * Must be able to demonstrate the use and understanding of all facility recipes, policies, and procedures. * Must be able to communicate to all staff the minimum production/service requirements. * Must be able to demonstrate knowledge of special diets and proper portioning amounts for same. Licenses/Certifications: * Must be certified through HACCP or ServSafe Food Safety Sanitation Course or must obtain certification within three (3) months of employment. Responsibilities * Follows established menu schedule and prepares menu items according to appropriate food recipes. * Cleans kitchen equipment. Follows weekly cleaning schedule for all equipment and ensures equipment is in proper working order. Reports any equipment repairs immediately to the Food Service Manager/Director. * Ensures food is not left at improper temperatures, prevents cross-contamination of foods, and ensures a safe environment for the patients and staff. * Follows proper sanitation practices such as daily cleaning and proper storage. Ensures that temperature sheets are completed daily, and empty boxes and trash are removed throughout shift. Also follows the clean-as-you-go practice and is evident when kitchen is inspected. * Stocks and rotates supplies. Ensures storeroom and cooler are stocked in a timely manner. Items needed to meet the daily menu requirements are available in the kitchen. * The above responsibilities are a highlight of responsibilities and not a full list.
