Overview
Under the supervision of the Kitchen Supervisor, the cook is responsible for cooking and packing lunches for approximately 900 senior participants a day for Senior Centers, Nutrition Sites, and the Home Delivered Meal Program meal participants. The cook performs clean up and sanitation duties on kitchen equipment and facility in accordance with the local Health Department and HACCP Rules and Regulations as well as assists with inventory and ordering of food items.
Responsibilities
- Understands written and verbal instructions for food preparations; able to convert recipes to correct quantities for daily meal counts.
- The ability to slice a variety of food items by hand with a chef's knife to include fruits, vegetables, meats, fish, poultry, and cake; use an electric and manuel can opener to open #10 cans.
- Clean items to be prepared in a sink such as fruits, vegetables, and poultry and peel vegetables with a peeler.
- Defrost items in a sink with running water to include meat, fish, and poultry.
- Safely operate an electric slicer, food chopper, food processor and a 60-quart electric mixer to process foods as required for recipes.
- Cook using gas and electric ovens; cook in large roasting pans on top of the range
- Loading and unloading cooking pans and trays loaded with food which may weigh up to 50 pounds onto carts and into warmers from hot ovens.
- Transferring prepared food from pans and packing the correct portions in bulk quantities in standard size cafeteria pans for four (4) Senior Centers, four (4) Nutrition Sites, and the Hime Delivered Meal Program; assist in packing individually wrapped items for the Home Delivered Meal Program such as bread, salads, and desserts.
- Clean and sanitize in accordance to the local Health Department and HACCP Rules and Regulations approved sanitizing solutions, such as bleach water, all surface areas of the kitchen to include workstations, tabletops, walls, floors, inside and outside of equipment such as the oven/range, vent hoods, walk in and reach in refrigerators, walk in freezer, ice maker, etc.
- Wash pots, pans, and utensils using the three-sink method
- Taking the trash out to the dumpster on utility carts
- Must work with the kitchen crew and display teamwork approach in order to achieve department standards of 90 or above on City/County Food Service Establishment Inspection Reports
- Record items taken out of inventory on a daily basis, assist the kitchen supervisor with weekly counts of items in stock
- Monitor taste, texture, color, and smell of food during preparation and packing process; read 0-220°F pocket thermometer; involves acuity of all five senses and manual dexterity.
- Performs other related duties and fulfills responsibilities as required.
Position Type and Typical Hours of Work
- Non-Exempt, Full Time- Monday- Friday, 6:30am- 3:00 pm
- Flexibility to work evenings, weekends, and holidays is a schedule requirement

Minimum Qualifications
- High School Diploma / GED
- Two (2) years of experience
- Must be able to stand or walk up to 8 hours per day
- Must be able to lift fifty (50) pounds
Licenses and Certifications
Required
- A valid driver's license is required; successful out-of-state candidates must be able to obtain a valid Texas driver's license within 90 days of hire
Required within thirty (30) days of hire
- Food Manager's certification
Required within ninety (90) days of hire
- First Aid certification
- CPR certification

Basis of Rating
