Summary:

Prepare food to provide nutrition and variety to the Residents. Coordinate Resident involvement in the kitchen and dining room.

Essential Duties and Responsibilities:
include, but are not limited to:

  • Prepare food daily as outlined on the weekly menu plan.

  • Assist with menu planning; review and adjust menus with Supervisor to accommodate foods in season, vendor sale prices,

special events and holidays.

  • Alter or adapt recipes to accommodate special dietary needs of Residents or to improve recipes. Recipes should be

prepared with no added sodium (salt).

  • Identify food and supplies needed for next weekly menus and report to the Supervisor.

  • Maintain a written inventory of dry goods, refrigerated and frozen foods, non-food supplies, dishes and utensils.

  • Prepare meals for storage and portion control-upon delivery; ensure proper storage of all delivered foods and ingredients.

  • Maintain a clean, orderly and safe kitchen environment.

  • Ensure proper handling, labeling and storage of food for infection control.

  • Ensure compliance with regulations.

  • Coordinate and participate in serving of food.

  • Monitor portion control to meet Residents requests and minimize waste.

  • Ensure attractive presentation of food on the plate before serving.

  • Maintain an accurate record of chargeable meals (resident, guest and catered) and non-chargeable meals (resident,

employee and marketing).

  • Notify Manager of malfunction of equipment or appliances.

  • Provide input for Resident assistance plans.

  • Encourage and invite Residents to participate in the dining service program and activities.

  • Attend all meetings and in-services.

  • Work schedule as assigned by Supervisor.

  • Train, supervise and assign work to staff in the dining services program.

  • Carry out other duties as assigned by Supervisor.

Requirements

  • All waitstaff and kitchen staff must wear restaurant grade non-slip shoes.

  • Be at least 18 years of age.

Qualifications:

Commercial cooking experience preferred or at minimum, domestic cooking experience with large groups required. ServSafe Certificate preferred, or the ability to pass a ServSafe class. Supervisory experience preferred. High school diploma or GED required with reading, comprehension and writing ability at a 12th grade level or higher.

Required hours are 8am- 4pm, including every other weekend. Responsibilities * Displays and maintains friendly and efficient PRIDE values attitude towards customers, co-workers, patients and visitors. * Maintains standards of the Food Service Department, follows policies and procedures set by the department, hospital and Atlantic Health System, the New Jersey Department of Health and the Joint Commission on Accreditation of Hospitals. * Reviews menus, assembles food supplies and equipment for daily hot/cold food production following assignment by supervisor. * Prepares menu items using established food production systems and utilizing equipment within cooking area. * Follows recipe and other production information to complete preparation of assigned menu items. * Wash, peels, cuts and shreds vegetables and fruits to prepare them for use. * Bakes, roasts, broils and steams meats, fish, vegetables and other foods. * Carves meat, portions food in serving containers, adds gravies, sauces and garnishes. * Performs other tasks as needed/directed to facilitate workflow in kitchen and food distribution areas. * Procures food products/supplies from refrigerator, freezer and other storage areas. * Provides assistance, where needed, with other food production. * Assists in stocking inventories, supply ordering and unit inspections as directed. * Keeps supervisor informed of equipment needs. * Maintains compliance with standards of operation, and within Business Conduct Policy. * Maintains all records and reports necessary to comply with AHS, government and accrediting agency standards, regulations and codes. * Maintains compliance with all requirements of Federal, State and local regulations and guidelines including the Civil Rights Act of 1964, as amended, the Age Discrimination in Employment Act of 1967, as amended, and the Americans with Disabilities Act, as amended. Qualifications * Able to lift, push, pull 50 lbs. EDUCATION: * High School Diploma or GED Equivalent preferred.
