Job Summary

This is a Great Opportunity to join a great company. We are seeking a growth minded Chef Manager for our growing business. In this role you will be responsible for the success of both the culinary and food service operation.

Key Responsibilities:

  • Full culinary management of food service operation to include inventory, ordering and receiving

  • Knowledge of P&L accountability and contract-managed service experience is desirable

  • Proficient in menu development, cost controls, purchasing and inventory with a focus on sourcing and utilizing local food products

  • Possesses a passion for sustainability

Preferred Qualifications:

  • Minimum of Associate's degree in Culinary Arts

  • Must have a working knowledge of HACCP

  • Three years of culinary management experience in contract foodservice, fine dining setting, or restaurant with inventory and purchasing knowledge and control

  • Extensive knowledge of food and catering trends with a focus on quality, production, sanitation, food cost controls, and presentation

  • Experience with exposition cooking needed

  • Knowledge of P&L accountability and contract-managed service experience is desirable

  • ServSafe certified is a plus

VIEW JOBS 11/18/2018 12:00:00 AM 2019-02-16T00:00 General Statement The Site Manager PT, under general supervision, performs food service work in the overall operation of a congregate meal site according to the Federal, State and County Rules and Regulations governing the nutrition program for the elderly. Work includes proper record keeping pertaining to attendance and participant intake. Employee is responsible for ordering meals, monitoring meal delivery, and making certain a full meal is available to each participant in the program. Employee is responsible for supervising volunteer activities at the site. Essential Functions Arrives at the site before the caterer, turns on and fills steam tables, ovens, heat, etc. Cleans tables, counter tops, and areas where food will be placed. Supervises the activities of Site and Meal Delivery Volunteers. Keeps them informed of any changes in client status and ensures they follow program and state policies, procedures and state regulations. Checks to see if volunteers wash hands and are properly attired with hats, plastic gloves, and aprons. Assists with the recruit of new program participants and volunteers. Receives food from caterer and places it in steam tables and refrigerators. Takes temperatures, records them on tickets and on monthly temperature sheets. Puts out contribution box, signs in sheets, and routes sheets for clients and volunteer carriers. Counts out plastic bags, bowls, and foil trays needed to pack home delivered meals. Packs home delivered meals, stores hot items in ovens and cold items in refrigerators. Stays abreast of changes in home delivered meal routes and client changes. Puts food into bowls for congregate meals and store items in refrigerators. Makes coffee and/or tea for congregate participants. Presents program for congregate participants. Serves food to congregate participants. Cleans out pans and steam tables. Empties ice and milk coolers of ice. Places clean pans and milk coolers in designated area for caterer to pick up the next day. Converses with people while they eat. Distributes home delivered meals to volunteers as they come to pick them up. Cleans coffee carafe and basket and tea pitchers. Cleans tables, countertops, stove tops, and steam table. Cleans floors. Checks bathroom for paper towels and tissues, empties trash cans. Completes attendance records for the day. Develops and maintains cooperative and courteous relationships with division employees, staffers and managers in other divisions, representatives from organizations, and the general public so as to maintain good will toward the division and project a good division image. Checks that all the lights, stove, steam table, coffee maker, heat or air conditioning, and lights are turned off and building is locked. Knowledge of the social and physical needs of senior citizens. Knowledge of the methods of serving prepared meals in quantity lots. Knowledge of the required storage temperatures for various foods in order to preserve flavor and value. Knowledge of state and federal guidelines governing services for the elderly. Maintains high standards of personal cleanliness and meets required sanitation standards. Performs new client registration. Completes of monthly paperwork, including but not limited to attendance records, meal delivery tickets and recording of temperature sheets for each menu item. Compiles and/or tally totals. Performs other related duties as assigned. Education and Experience Education and Experience: Requires a High School Diploma or an acceptable equivalency diploma (GED), and one (1) year of experience in serving food and coordinating activities; or equivalent combination of education and experience. Licenses or Certifications: Must have a valid Driver's License and be able to maintain a safe driving history as defined by the Union County Vehicle Use Policy. Special Requirements: None Specified.
