The goal of the Chef de Cuisine is to manage a specific restaurant. The Chef de Cuisine will take council from the Executive Chef to create, implement menu and concepts but the position is designed so that individuals will work in a manner that is consistent as that of an independent owner/operator.

Responsibilities include:

  • Act as senior leadership by developing and assuming key management responsibilities

  • Assume the role of liaison between all dining room operations and culinary staff

  • Supervise the preparation and cooking of various food items

  • Develop and implement creative menu items within the restaurant concept

  • Plan, coordinate & implement special events and holiday functions

  • Manage hourly kitchen employees through scheduling, payroll, training, coaching, evaluating and hiring

  • May manage other key culinary leadership rolls including supervisor and other less senior Sous Chefs

  • Lead and coach the team towards achieving exceptional guest service and employee satisfaction results

  • Monitor food production, ordering, cost, and quality and consistency on a daily basis

  • Participate in marketing events directly related to their specific restaurant

JOB DESCRIPTION Responsibilities The Asian Specialty Chef assists to ensure smooth and efficient BOH operations for the property's Noodle Bar & Sushi restaurant Essential duties include, but are not limited to: * Responsible for scheduling employees. * Consults employees on daily responsibilities, following their progress in completing tasks time-frame allotted to ensure proper production. * Controls production levels in order to minimize waste and advising Chef of progress. * Implements operations, standards and procedures established by Chef including sanitation, tasting of products and presentation. * Ensure all food is prepared in accordance with operation standards. * Interact with guest as much as possible to create a memorable experience * Assist other line employees with daily responsibilities. * Strive to eliminate over-production and over-purchasing. * Ensure all food items are produced in accordance with established standards in respect to preparation, storage and accountability. * Ensure that production and storage areas are maintained in accordance with city and state health department codes. * Promotes positive public/employee relations at all times. * Maintains a clean, safe, hazard-free work environment within area responsibility. Qualifications * Minimum of two (2) years of culinary management experience in high volume Asian-themed free standing restaurant, large hotel, casino or resort. * Two (2) year culinary arts degree. * High volume wok experience. * Thorough knowledge of Hong Kong, Cantonese, and other regional cooking styles desired. * Dim sum experience desired. * Thorough understanding of Chinese and Vietnamese cooking including production and execution. * Ability to communicate in Chinese and/or Vietnamese. * Must be able to analyze Food and Beverage data. * Proven ability to reduce food costs. * Must have strong administrative skills and computer skills. * Must be able to demonstrate and deliver a high level of service to our guests. * Have strong verbal and written communication skills. * Has ability to lead and develop a cohesive culinary team. * Can interface effectively with FOH staff to produce a positive guest experience Work Environment: * Duties and responsibilities are typically performed in the back of house of the casino, which can be faced-paced with excessive noise. Also, there may be times where you will need to be on the Casino Floor or pass through this area. On the Casino Floor, you may be exposed to casino-related environmental factors including, but not limited to, second hand smoke and excessive noise. * While performing the duties of this job, the employee is frequently required to stand; walk; use hands to finger, handle, or feel; reach with hands and arms, talk or hear; and taste or smell. The employee must frequently lift and/or move up to 50 pounds.
