Position Summary

Assist the Executive Chef in all "from scratch" food and pastry production for off premise catered events. Maintain the highest professional food quality and sanitation standards through ongoing training and coaching of the culinary team.

Provide feedback in the development of menus, food purchase specifications and recipes. Demonstrate the company's core values of respect, honesty, integrity, diversity, inclusion and safety.

Essential Job Functions

Ensure proper safety and sanitation in kitchen

Ensure proper equipment operation/maintenanceStay current with culinary and catering trends

Assist the Executive Chef to develop recipes, standardize production recipes to ensure consistent quality, establish presentation technique and quality standards

Estimate food consumption and requisition for purchases of food, beverage and paper products

Track and monitor inventory, thus minimizing shrink/wasteTrain and manage kitchen personnel and supervise/coordinate all related culinary activities

Oversee plate up, and other food production at multiple off site venues

Oversee kitchen production ensuring consistent, quality products in a timely manner

Assist the Executive Chef in monitoring food and labor budgets for the department

Supervise and coach direct reports in the performance of their duties; complete performance reviews and provide feedback to direct reports

Minimum Position Qualifications
2+ years of experience as a sous chef or 4 years of experience as a line cook in a mid to large volume operation

Culinary degree or equivalent experience

Ability to work with various cleaning solutions, safely use sharp tools, and carefully operate slicing equipment

Knowledgeable and current in industry trends

Exceptional knife skills

Valid Drivers License with the ability to travel independently

Ability to create and implement new recipes

Ability to manage in a diverse environment with focus on client and customer services

Proficient in Microsoft OfficePossess and continuously demonstrate strong organizational and communication skills

Ability to understand written and oral direction and ability to communicate the same direction with others

Desired Previous Experience/Education

Any sous chef or line cook for off premise catering operation

ServeSafe certification or equivalent

Education Level: High School Diploma/GED Desired

Essential Duties and Responsibilities Ensures that during food preparation quality standards are maintained, trains team in cooking methods, presentation techniques, portion control, and retention of nutrients. Maintains a safe and sanitary work environment for all team members. Other duties include menu planning, preparation of budgets, maintenance of food cost, and other records. * Evaluates, rewards, and disciplines kitchen personnel as appropriate. * Trains team in tasks related to food production, storage, and service. * Plans menus and establishes portion sizes and standards of service for all menu items. * Controls food cost by following purchasing specifications, product storage requirements, recipe standards and waste control procedures. * Trains kitchen staff in safe operating procedures of equipment, utensils, and machinery. * Trains kitchen personnel in sanitation practices and establishes cleaning schedules, and stock rotation schedules, refrigeration temperature control points, and other sanitary controls. Qualifications Education and/or Experience * Minimum of 5 years experience as lead cook or chef * Bachelor's degree in Management, Nutrition or Hospitality Management preferred. * Minimum of three years of previous food service management experience in a corporate dining facility required. * Strong leadership skills with the ability to effectively direct operations in a fast-paced environment. * Proficient in Microsoft Office applications. Physical Demands * Must be able to speak clearly and listen attentively to kitchen team members and guests. * Must be able to stand and exert well paced mobility for periods up to four (4) hours in length without a rest period. * Must have the ability to grip, lift, and carry pots, pans, tables etc., up to 40 pounds in weight repetitively. * Must be able to manipulate utensils used in food preparation repetitively. * Must be able to read and write to facilitate the communication process. * Must be able to lift food transportation cambros up to 100 lbs in weight with the assistance of one other person repetitively.
