POSITION SUMMARY:
The Certified Dietary Manager will provide direct nutrition service to patients and to prepare food in accordance with current applicable state and federal regulations, facility procedures and policies, and as may be directed by the Administrator, Dietitian and/or Food Services Director, to ensure that quality food service is provided at all times.
ESSENTIAL JOB DUTIES:
To perform this job, an individual must accomplish each essential function satisfactorily, with or without a reasonable accommodation.
Work with the facility's dietitian to implement recommended changes, assist in planning regular and special diet menus as prescribed by attending physician, and ensure that food is available for preparation by cooks
Order, prepare, and serve meals that are palatable and appetizing in accordance with portion control procedures, as well as for therapeutic diets in accordance with scheduled menus and sanitary regulations
Inspect special diet trays to ensure accuracy, portion control, appealing layout, etc., and evaluate kitchen and dietary area for upkeep, supply control, cleanliness and safety
Recognize and respond to dietary emergencies; document observations, interventions and outcomes
Interpret department policies and procedures for employees, patients, families, visitors, governmental agencies
Assist in developing methods to determine quality and quantity of food served
Assist and observe tray line
Make purchases for select menus as applicable
Monitor meals
Instruct and assist cook as needed
Attend and participate in patient feeding process
Review menus prior to preparation of food
Meet with dietary personnel to identify and correct problematic areas, and the improvement of services
Ensure food service is properly maintained to meet the needs of patients
Assist with a plan of correction for dietary deficiencies noted during survey inspections
Ensure compliance regarding safety and sanitation procedures
Instruct and assist cooks/dietary aides as needed
Assist in orientation, training and scheduling of employees as directed
Document in medical record, as needed
Complete production sheets for following day
Complete forms, reports, evaluations, studies, etc. to ensure control of equipment and supplies
Other duties as assigned
JOB REQUIREMENTS:
Maintain privacy and confidentiality of all patient information and facility business
Follow the established universal precautions and isolation procedures
Encourage an atmosphere of optimism, warmth and interest in patients' personal and health care needs
Successful completion of required training
Handle multiple priorities effectively
Independent discretion/decision making

REQUIRED QUALIFICATIONS:
o High school diploma or equivalent required
o Associate's or higher degree in food service management or in hospitality, if the course study includes food service or restaurant management, from an accredited institution of higher learning
o Bachelor's Degree in Dietetics preferred
o Minimum of one (1) year of dietary experience in a supervisory capacity, preferably in a hospital, skilled nursing care facility or other medical facility
o Three (3) years' experience in a hospital, nursing care facility, or other related medical facility
o Dietary Manager Certification is recommended; however, if employee is not certified, employee MUST have evidence of successful completion of approved Certified Managers course work or MUST be eligible and enrolled in an approved Certified Manager's course no later than the end of the employee's probation period (90 days).
