Exempt Evaluation Annually Revised Date 3/18/2024 JOB SUMMARY Manages, directs, and assists in the performance of tasks related to the production, receipt, storage, packaging, and dispatch of food prepared in the school system's Central Kitchen (CK) to insure the production and delivery of food which meets the nutritional and educational needs of the students in the school district. ESSENTIAL DUTIES AND RESPONSIBILITIES include the following. Other duties may be assigned.

Manages and directs the production of food in the CK; participates in the development of recipes; maintains recipes and makes adjustments as necessary. Monitors and supervises to ensure that food is prepared in a sanitary and safe environment; assists in establishing processes and procedures for re-thermalization of products to insure serving of food that is nutritious and safe. Monitors and supervises to ensure that safety regulations are established and followed in the operation of the Central Kitchen food production.

Supervises employees participating in all facets of Central Kitchen operations including food production/preparation-baking, roasting, mixing, chilling, etc.; receiving, packaging, storage, and delivery, Trains CK staff in the proper operation and utilization of manual and automated equipment. Responsible for determining staffing, equipment and supply needs necessary for the successful operation of the CK functions. Develops production plans and schedules to assure production requirements are met and food is produced and delivered in a timely manner.

Works with the School Nutrition administrative staff to participate in the development of menus; coordinates operations and functions of CK with menus to ensure the timely preparation and delivery of food. Supervises, manages, trains, evaluates, and monitors employees; participates in the screening and selection of CK employees. Attends meetings, conferences, workshops, etc.as necessary.

Performs simple and routine maintenance tasks (such as checking the oil, water, gas, battery, etc.) on CK equipment and vehicles; reports problems and malfunctions to supervisor. Informs supervisor of material, tool, supply or equipment needs; maintains and submits records and reports as required. Complies with safety rules and regulations.

Utilizes and maintains equipment and material in a responsible and reliable manner. Performs other related duties as required or assigned. QUALIFICATIONSEDUCATION and/or EXPERIENCE High school graduation or GED certificate is required.

Post-secondary education is highly desired. Minimum of three (3) years of experience in large quantity food production is required. Some experience with cook/chill operations is desired.

Experience with Central Kitchen operations is preferred. KNOWLDEGES, SKILLS, AND ABILITIES Knowledge of principles and procedures of school nutrition, food safety and sanitation. Some knowledge of CK operations.

Knowledge of supervision and management. Good critical thinking skills. Good problem solving skills.

Skill in the basic operation and utilization of personal computer and standard software programs (spreadsheets, word processing, presentations, etc.) Ability to perform manual work in lifting and moving and operating tools and equipment utilized in food preparation. Ability to work under pressure and meet deadlines. Ability to accurately conduct mathematical calculations.

Ability to understand and follow directions and instructions. Ability to work motivate, lead, direct and supervise staff involved in various CK functiions. Ability to perform manual tasks requiring physical strength and endurance, Ability to maintain good working relationships with personnel of other departments.

Skill in the set-up, adjustment and use of the tools and equipment of the trade and in their care and maintenance. CERTIFICATES, LICENSES, REGISTRATIONS HACCP Food Safety Certification is desired. Must have (or obtain after employment) ServSafe certification.

Certification as a ServSafe instructor is desired. PHYSICAL DEMANDS Position requires the operation of one or more of the following on a regular basis: telephone and/or other communication devices; personal computer, copy machine, calculator, standard kitchen/food preparation equipment-ovens, conveyor belts, slicers, can openers, label printers, etc. Medium work: lifting or moving 20-30 pounds frequently Position requires standing for extended periods, walking, standing, bending, pushing, pulling, lifting and reaching; normal finger dexterity, visual acuity (with or without corrective lenses), hearing, talking, and grasping are required to perform essential function.

WORK ENVIRONMENTWork is typically performed in a large food preparation/kitchen or an office setting. Some exposure to moderate levels of heat, cold, and moisture. Some exposure to varying temperature-may require time in freezers, coolers, pantry, warehouse, etc.
