The Dining Services Department is seeking a full-time Catering Sous Chef. The primary purpose of this position is to direct all production activities of the catering department ensuring effective, efficient and financially sound processes.

Job Duties
In cooperation with the Catering Manager and the Executive Chef, assist in the development of catering menus, to include pricing and costing
In cooperation with the Executive Chef and Executive Sous Chef, determine the need for and coordinate the scheduling of additional production staff
Ensure the timely transport of products and/or equipment for catered events
Monitor production of catered items in the bake shop, cold prep, and hot prep; assist in preparation as needed
Ensure that all catering pick up items are ordered and staged in a timely manner for customer pickup
Function as the principal production cook on all catered events
Assist in coordinating with the purchasing department all requisitioning of necessary items to fill catering orders
Perform weekly inventory of all catering items and report to purchasing department.
Ensure leftovers from events / purchasing are utilized or transferred to marketplace to be utilized.
Meet with Executive Sous Chef & Catering Manger on a weekly basis to review BEO's & production strategy
Ensure that preparation and serving areas are clean and orderly and all food and equipment is properly stored following each catered event. Inspect catering equipment regularly for proper maintenance.
In the absence of the Executive Chef, Executive Sous Chef or Senior Lead, supervise all production and support personnel and be responsible for all production operations and activities
Responsible for overseeing all stations are properly set up, managing the par levels of all offerings. Utilizing leftover product to distribute throughout the Market Place and ensuring that all stations have what is needed for each meal period
Responsible for proper signage for all offerings and double-checking allergens
Serves as the PIC (Person in Charge) and facilitates the daily staffing needs when other chefs are not onsite
Provides leadership and training for full time, part time and student staff in all areas
Ensures that all production and food safety records are accurately kept and logged
Move staff from different areas as needed to meet service needs and to handle staffing issues such as employee absences
Assist in the production and support areas as necessary, which may require functioning in an active cooking or production capacity for all or part of a normal shift. This would include residential and retail aspects of the operation
Assist in maintaining the Computrition computerized/written recipe file for all necessary special event items
SUPERVISORY RESPONSIBILITIES:
This position directly supervises the Catering Cook and production personnel in the absence of the Executive Chef or Executive Sous Chef.
Required Qualifications
Associates degree in culinary arts is required; plus five to ten years of catering/fine dining experience; or equivalent combination of education and experience.
