Position Info:

Banquet Manager, Grade 26, Bonus Eligible

Job Overview:

The Banquet Manager is responsible for all aspects for the Banquet Department functions, in accordance with property standards at The Village at Breckenridge, Mountain Thunder Lodge and River Mountain Lodge. Directs, implements and maintains a service and management philosophy which serves as a guide to respective staff to ensure guest satisfaction at the respective properties.

Food & Beverage Director

Work Environment:

Banquet functions areas, meeting rooms and service areas, kitchen/stewarding and involves working under variable temperature conditions, indoors/outdoors and travel between the three properties.

Key Internal Relationships:

Banquet Staff, Kitchen/Stewarding Staff, Property General Managers, Conference Services Staff, Sales Staff, Front Desk, Housekeeping, Engineering, Human Resources & Accounting Staff.

Key External Relationships:

Property Guests/Visitors, Banquet Vendors (Wedding Planners, Florists, DJ/Bands, Liquor Vendors, etc.)

Duties & Responsibilities:

Achievement of budgeted revenues as well as labor, beverage and operating costs. Achieve maximum profitability and overall department success by balancing controllable costs and quality of service.

Ensures inspection of meeting/function rooms prior to guest arrival and ensuring that client specifications have been met. Check food and beverage/coffee breaks, etc. for adherence to BEO and quality of product and service. Greets the client/guest upon arrival and ensures last minute changes are met.

Participates in and insures function space is in show condition for site-tours. Coordinate the general housekeeping and cleanliness of the function, atrium, lounge, library space and back of house areas. Dealing with customer complaints.

Control and maintenance of banquet china, glass, silver, linen and service equipment. Completion of budgetary function yearly and monthly forecasting and critique of P&L statements. Completion of weekly banquet schedules as necessary to ensure adequate and consistent levels of service.

Supervise and coordinate the daily operation of meeting/banquet set-ups and service. Completion of banquet bar requisitions. Maintaining banquet bar cost controls and beverage service policies in compliance with Colorado liquor laws.

Following proper purchasing and requisitioning procedures. Follow-up on each function by completing the daily MOD function and wedding recaps and submit to CS, wedding sales/service and property leadership. Attendance and active participation in VAB daily morning meeting, BEO meetings, con-ops meetings, F&B meetings, VAB HLT meetings, and monthly P&L finance meetings.

Ensures accurate banquet billing and location close, bi-weekly payroll completed, weekly orders completed, month end responsibilities completed, etc. Ensures proper training, development and professional appearance of the banquets team. Conducts monthly department meetings.

Responsible for personal development and growth and discipline of personnel when required. Responsible for performance management, development and accountability of the entire banquet team with special focus on the Assistant Banquet Manager and Banquet Captains.

Qualifications:

Hospitality Degree preferred, minimum 3 years banquets/catering management experience, knowledge of specific room set-up styles, knowledge of organizing services from information on BEO's, knowledge of staffing guidelines/requirements for various types of banquet functions, knowledge of food & beverage cost controls, experience managing department budgets and P&L's, familiarity with sales and marketing tools for banquets, knowledge and proficiency in Microsoft Office suite.
