At Dollywood Parks & Resorts, we create memories worth repeating. We do this every day across Dollywood Resorts which includes over 600 rooms and 15 Food & Beverage outlets, all located in the Great Smoky Mountains of East Tennessee. Our plan is to grow our resort footprint to over 1200 rooms across five resorts at Dollywood and to add other resorts to our overall company resort portfolio.

We are seeking an individual who has the ability to bring the vision of the Dollywood Resorts to life. The recipe for the right Banquet Captain will be equal parts curious learner, innovator, administrator, mentor and motivator.

The Banquet Captain, Event Setup position exists to supervise banquet setup hosts, coordinate and set banquet events assigned and to implement property policies, procedures and Moments of Service (MOS). Excellence in customer service is carried out day in and day out with our external guests and internal guests. This is to be done in a manner consistent with the mission, values, and operating philosophies of The Dollywood Company.

Summary of Essential Functions & Responsibilities

  • Must be well organized and efficient. Performs planning and organizing of functions for the banquet department, including maintaining the banquet logbook, temperature log books, consumption sheets, maintaining and updating banquet event function sheets.

  • Checks banquet rooms and banquet back of house areas for cleanliness, proper set up, sufficient supplies, and equipment.

  • Open Communication with management and hosts that may include evaluations of hosts, scheduling and complete training of service hosts.

  • Monitors setup of event rooms ensuring all standards are followed.

  • Assists the Banquet Manager in entering HotSos maintenance repair tickets and or cleaning schedules for all banquet equipment and facilities.

  • Supervises the setup of banquet functions, including set-up, coordinated room refreshing in between sessions, and breakdown.

  • Coordinates function details with banquet staff, conference planning, and banquet leadership.

  • Conduct Pre-Shift meetings with banquet service hosts before each event.

  • Ensures all BEO checks are accurately compiled, and submitted for billing to the group folio.

  • Ensures accurate daily sales reconciliation and time and attendance records are completed and provided to Banquet Manager and or Director of Banquets.

Management reserves the right to change and/or add to these duties at any time.

Education and Experience Required

  • Must be at least 18 years old.

  • High school diploma or equivalent, Required.

  • One (1) year of foods/banquet service experience, Required.

  • Supervisory experience, Preferred.

  • Must be able to obtain Serve Safe certification within first 30 days.

  • Tennessee Alcohol Board Commission (TABC) Certification, Required.

  • Basic Computer Skills, Required.

  • Must be able to pass a drug screen and background check.

  • Able to transport material or equipment, or lift, move, or carry heavy (over 30 pounds) materials for intermittent periods throughout the day.

  • Able to lift up to 50 pounds, with assistance.
