What is an Assistant Kitchen Manager?

The Assistant Kitchen Manager will report to the Kitchen Manager and assist in running all kitchen and back of house operations. A Day in the Life of an Assistant Kitchen Manager:

  • When the Kitchen Manager is not present, the Assistant Kitchen Manager is expected to step-in and perform management duties as required

  • Assist in leading the kitchen team in performing all food preparation activities

  • Assist with inventory and supplies ordering

  • Conduct regular line checks to ensure consistent efficiency and productivity

  • You will be responsible for assisting in hiring, training, managing, scheduling and developing staff team members

  • Ensure all company policies and systems are followed

  • Maintain appropriate staffing pars by actively tracking labor and maintaining budgeted staffing expectations

  • Supervises, trains, develops, and assesses cooks and dishwashers to ensure continuous growth through orientations, direction, and feedback

  • Ensure equipment is cleaned daily and supplies are stored properly

What You Will Need to Have:

  • Minimum of 2 years supervisory kitchen experience

  • Food Safety Certification

  • Great leader capable of recruiting and training staff

  • Ability to stand or walk for extended periods of time

  • Ability to grasp, lift and/or carry up to 50 lbs. as needed

  • Knowledge of safely handling kitchen equipment and how to maintain supplies and equipment

  • Ability to distinguish product, taste, texture, temperature, presentation and preparation

  • Bilingual English/Spanish preferred

ESSENTIAL DUTIES AND TASKS: Reporting to the Kitchen Manager, the Assistant Kitchen Manager (AKM) will effectively and efficiently assist in running a busy, high-volume kitchen. The AKM's responsibilities include, but are not limited to: * Act as second in command and oversee kitchen when Kitchen Manager isnot present in a multi-faceted Restaurant/Entertainment scene; * Monitor food safety for handling and preparation according to guidelines * Conducts regular line checks, monitors stock levels and manages inventory to ensure recipe adherence * Schedule and appoint tasks and responsibilities to kitchen staff * Cleanliness & maintenance of the kitchen - ensures equipment is clean daily, supplies stored properly, etc. * Ensures efficient kitchen timing especially during peak hours to assure smooth seat side service. * Assist in the training and coaching of kitchen staff to work within a theatre environment. MINIMUM QUALIFICATIONS: * 1 year of supervisory kitchen experience in a high-volume restaurant ($4 million or more) * Bilingual English/ Spanish preferred * Able to work ten hour+ shifts and able to stand or walk for extended periods of time * Able to grasp, lift and/or carry up to 50lbs as needed * Finger/hand dexterity to operate kitchen machinery, knives, etc. * Must possess hearing, visual and sensory abilities to observe and detect emergency situations; also to distinguish product, taste, texture, temperature, presentation and preparation. * Understands how to safely handle kitchen equipment, how to maintain supplied and equipment, etc. * Must have a current ServSafe and Alcohol Certification if applicable in your state of applying.
