About the Position

This position is primarily responsible for providing direction and leadership to all team members within the department to include: BOH, FOH, HCC, Catering, lounge and retail operation(s). Responsible for maintaining high standards in service, resident relations, costs controls, staffing, safety, sanitation, training and special functions. Also responsible for the recording, reporting and maintaining all operational and sales stats for the Jefferson Dining Room, Bistro, BC Lounge, Market Place, Fireside and catered events.

Job Duties

  • Directly responsible for retail and revenue generating operations for all Dining Service venues within GHBC.

  • Directs departmental activities (e.g. meal service, food production, catering activities, tray service and merchandising).

  • Circulates in dining areas and on HCC/AL floors during meal periods to field resident/guest comments pertaining to service and food quality.

  • Oversee the scheduling and job duties of team members in all areas within the department and oversees payroll.

  • Responsible for interviewing, hiring, orienting, training, evaluating and counseling of all staff. Trains staff in customer service, proper portioning, cashier skills as well as safety and sanitation.

  • Assists in the predicting, planning, monitoring, evaluation of cost programs, daily purchasing and maintenance of food preparation system, order book, recipe file, inventory, and storerooms, as assigned. Conducts team meetings. Participates in menu planning, writing and advertising.

  • Uses proper methods for food handling/infection control when managing and producing items.

  • Interacts frequently with customers and management team to determine satisfaction level and provide Service Recovery if necessary.

  • Implements Corporate and Community programs (i.e. Out Takes, Balanced Choice, Quarterly Seasonal Menus, etc,) as directed by Director of Dining Services.

  • Implements and maintains cash handling standards as outlined in the Goodwin Living Policies and Procedures Manual to eliminate theft of services or Company funds. Responsible for cash handling and record keeping in relationship to retail operations and or catering functions.

  • Interacts daily with Sous Chef and/or Executive Chef to assist in effective production practices and strong financial focuses.

Job Requirements

  • Minimum of five (5) years food service management; experience with retail or upscale dining experience, senior living food management, a plus.

  • Must have solid understanding of cash handling, financial management, and tracking procedures

  • ServSafe Food Protection certification

  • Must have experience with training and development of front-line team members

  • Experience working with multi-level management teams is a plus

  • Proficiency in Microsoft Excel, Word, Power Point and Publisher is a must

  • Must have experience developing dining programs and implementing procedures

  • Ability to collect, analyze, and interpret data and share findings with appropriate management levels

  • Exceptional written and verbal communication skills in English
