Position Summary and Responsibilities

  • Prepare menu items assigned by Head Chef or Supervisor/Manager, including but not limited to: roasting, broiling, frying, sauteing, grilling, blanching, soup productions including stocks from scratch, sauces & marinades including making a roux from scratch, wash peel, cut, seed and cook vegetables, casseroles, stews and souffles.

  • Prepare menu items using recipes or the ability to season and scratch cook with own flare, creativity.

  • Knife skills including, boning, chopping and dicing.

  • Assign kitchen staff in meal production.

  • Perform quality work within the deadlines as assigned by Head Chef or Supervisor/Manager.

  • Serve customers in an efficient and friendly manner; report problems to a supervisor.

  • Utilize Personal Protective Equipment per guidelines.

  • Perform related duties as assigned.

The Assistant Chef is a part of the success of the food service program, by following all Health Department regulations, Food Standards laid out by Vassar College with regards to food quality, freshness, presentation and ECO Sure Audit Compliance. Training will be provided regarding Kosher Cooking, Vegan Cooking, as well as knowledge of the 9 major allergens plus gluten.

The application process for this position will require a written and cooking test.

Available Work Schedule:

Sunday - Thursday 9:00am-5:30pm

Friday and Saturday off

Qualifications

  • Ability to maintain a clean, safe and sanitary work station, equipment and utensils.

  • Ability to safely operate machinery and equipment and set up/breakdown work stations.

  • Ability to move, position and place objects and equipment weighing up to and including 50 pounds.

  • Ability to work independently and to communicate effectively in English, including ability to converse, understand, read and write.

  • Sounds knowledge of proper food handling HACCP, sanitation and cooking skills in all areas.

  • Knowledge of proper operation of commercial food service equipment.

  • Ability to evaluate a recipe and recalculate as volume changes.

  • Demonstrated to work harmoniously with staff and customers.

  • Strong knowledge of FIFO.

  • Willingness to work overtime as available.

  • Overtime is assigned according to seniority guidelines
